The cream in the dish is just a trend. Someone presented this idea as a cinnamon roll "hack" to make an extra gooey cinnamon roll bake that is almost spoonable. I think it's a fine idea if you want something that is more like bread pudding, but it makes the rolls too soft and gooey to properly separate or even pick up with your hands. But basically if you want traditional style rolls that separate and get some crispness on the edges you should omit the cream

You’re supposed to pour it after the roll risen/spread in the pan, then pour.. it makes the top layer shiny/soft/crispy and gives that golden brown colour.. I’ve never seen anyone pour in between the rolls like that (and I’ve never done that either) that’s probably why yours taste like it’s raw, because it is

My family makes cinnamon rolls with cream and sugar in the bottom of the pan. The goal is to space the rolls out so they aren’t touching and have a bit of the cream mixture between. It bakes into this wonderful sauce to put on top, which is essentially the icing.
